Video Recipe  for  Crostata pie

This is a very famous recipe. The dough is easy to make, just be careful not to let the butter soften too much. The tricky part is getting two uniform layers of dough about the same thickness. In the video I demonstrate a professional technique which requires the use of a rolling pin and flour to gradually stretch it out without it sticking to the worktop.

  • 2oo g Sugar
  • 400 g Butter
  • 600 g Flour
  • 1 whole egg
  • A pinch of salt
  • 5 drops Vanilla essence
  • 5 drops Lemon essence (or zest)
  • 300g Jam

Method for Crostata Pie

1– Butter and Sugar
Mix butter and sugar  
2 – Egg and aromas
Add salt, egg, lemon and vanilla essences  
3 – Finishing the dough
When the dough is well blended and uniform, add flour and knead until you get a smooth, compact dough.
4 – Working the crust
Using a rolling pin, form your pie crust according to the size and shape of your pie dish.

To get an even layer with no tears, stretch the dough a little at a time, flouring both sides as shown in the technique in the video

5 – Preparing the pie dish
Grease the pie dish with butter
7 – Preparing the jam
Add two or three spoonfuls of water to the jam and place it in a pot on low heat, stirring to melt any lumps  
8 – Pouring the jam
Pour the jam on the pie crust and spread  evenly  
9 – – Making dough strips
Using your rolling pin, stretch out another layer of dough and cut it into strips a shown in the video  
10 – Decorating
Place strips diagonally on the pie to form a grid.  
11 – Decorating the pie
Your pie should look more or less like the one in the picture  
12 – Bordo
Place a strip of dough all around the pie to complete the decoration and use a fork handle to finish it off as shown in the video  
13 – Baking
Pre-heat the oven to 180°C and bake for 15 minutes
14 – Buonappetito!!
