There are many recipes for tiramisu on the web and that’s why I’ve never posted any.
Today I changed my mind. Over the years my wife has perfected the traditional recipe and optimized production times so that now it takes literally 20 minutes to make it. It is really very simple, so here goes:

Method
- Beat the eggs, yolks and sugar for 10 minutes
- Add a little Brandy (or other liqueur of your choice) to remove the egg taste
- Add the mascarpone
- Mix for about 2-3 minutes
- In the meantime, prepare about 450 ml of espresso coffee
- Pour coffee in a container so that it comes up to a little less than 1 cm from the bottom
- Soak one ladyfinger at a time for less than a second per side, I don’t like soaking them too much or the tiramisu will only taste of coffee
- Add more coffee to the container as it gets absorbed by the ladyfingers
- Place the first layer of ladyfingers on the bottom of another container
- Cover the biscuits with a layer of mascarpone cream
- Make another layer of soaked ladyfingers
- Cover again with cream
- Use a strainer to sprinkle the surface with cocoa
- Cover and let it sit in the fridge for about 12 hours

This recipe I very similar to the one I have been using for at least 25 years and came from Carluccio during his very first appearance on BBC. That recipe is as follows: 2 egg yolks, 4 tbsp caster sugar, 500g mascarpone, vanilla extract, 10ml Tia Maria and espresso coffee. My variation is that I add more Tia Maria and some amaretto liqueur to mascarpone mix and to coffee. Everyone that tried seem to have enjoyed it, I have been nicknamed the tiramisu man.
