Welcome to the focaccia and bread website . My name is Vittorio. I grew up in the middle of the flour and cake in the Familiy bakery in “Macelli di Soiglia” in the historic center of Genoa. Today I take care of anything, but the passion for baking and I ‘remained…. and over the years I have adapted some of the recipes of my father so that they work in the home environment. There are thousands of recipe sites on the web. In my site I try to do things in a somewhat ‘different:
Use the recipes with the professional tricks of the trade learned from my father and other sources like books and other specialized sites
Whenever possible, I explain the recipes and techniques, with step-by-step video
The recipes are tested repeatedly by me and modified to ensure a good result in the kitchen at home
I run strictly recipes at home with equipment that are typically available to home and housewives (the only thing a bit ‘out of the norm and I use’ un’impastatrice Kitchen Aid. In the future I will try ‘also kneading by hand to make the recipes even more ‘feasible).
The reason I realized most of the recipes in video and ‘that the secret of bread is not necessarily in the ingredients but rather’ in the techniques of handling the dough and rest times.
